Yummy Moist Fruit Cake
This is a great recipe if you are unable to have sugar or butter or just want to cut down on your sugar intake! It is so easy to make with a preparation time of only 5 minutes.
By soaking the fruit overnight this enables the fruit to become soft and moist resulting in a moist fruit cake.
In a bowl put 1 kilo or 2.2 lb dried mixed fruit and cover with 2 cups orange juice.
Cover and soak overnight.
Next Day:
Add 2 cups Self Raising Flour
1 teaspoon Cinnamon
1 teaspoon mixed Spice
Mix all the ingredients together.
Preheat oven to 180 o/C or 350 o/F
Place mixture into a 23 cm or 9″ square tin.Bake at 180 o/C for 1 hour 20 mins then reduce temperature to 160 o/C or 325 o/F and bake for a further 20 minutes or until cooked when pricked with a skewer.
Cool in tin for 15 minutes before turning the cake out of the tin.
