Tutti-Fruitti Slice Recipe
This has been a favourite slice going back to when my siblings and I were at school. We enjoyed the Tutti-Frutti Slice Recipe in school lunches and my children have gone on to enjoy Tutti-Frutti Slices in their lunch boxes too.
It is easy to make and goes well with a cup of tea or coffee! Enjoy!
Ingredients
4oz butter
6oz castor sugar (Optional ordinary sugar)
1cup mixed fruit
1cup coconut
4oz self-raising flour
1egg (beaten)
1 teaspoon vanilla essence
Cream butter and sugar, add egg, fruit, flour etc. Press into a Swiss roll flat tin (greased). Bake for 30 minutes in a preheated oven at 160ºc or 325 degrees. Cut into slices when cooled.
Handy Hints: The mixture is quite soft to touch and a golden brown when in oven, so don’t over cook it as when cooled will become firm. Cut into 2” x 2” squares.
