Sweet and Sour Meatball Recipe
Sweet and Sour Meatballs ( a tasty, quick meal)
500grams mince
½ cup sweet fruit chutney
2 tablespoons flour
3 tablespoons oil
1 small onion finely chopped
1 green capsicum (green pepper)
Sauce : 1 tablespoon cornflour
1 tablespoon soya sauce
1 tablespoon vinegar
2 tablespoons brown sugar
440 ml can pineapple pieces drained (unsweetened)
Saved pineapple juice
Method:
Combine mince and chutney, then shape into 16 balls. Toss meatballs in flour to coat. Heat 2 tablespoons of oil in frying pan and cook meatballs until golden brown and cooked through.
Drain on absorbent paper. Heat remaining 1 tablespoon of oil and sauté onion and capsicum for 5 minutes. Add combined cornflour, soya sauce, vinegar, brown sugar, pineapple pieces and juice to the pan. Cook and stir until sauce becomes thick.
Pour over the set aside meatballs. Serve on boiled rice with a fresh side salad or boiled or mashed potatoes with steamed carrots and broccoli.
Serve: 4-5 persons
Comments: An ideal easy, quick and inexpensive but tasty meal.
