Rhubarb Apple Date Chutney Recipe
This tasty Rhubarb Apple Date Chutney Recipe is delicious as a condiment with meat, poultry and salami or spread on crackers with a slice of cheese.
It is an easy recipe to prepare and can be simmering away while you have a coffee and read your favourite magazine!
Ingredients
6 stalks of rhubarb
250grs (approx 2 medium) apples
1 cup dates
2 medium onions
1 cup raisins
¼ cup chopped crystallised ginger
1 teaspoon mixed spice
1 teaspoon salt
½ cup sugar
1 ½ cups white vinegar
Method:
Trim and wash rhubarb. Chop into small pieces. Wash, core and roughly chop apples with skin on. Peel and chop onions.
Place all ingredients into a large saucepan and simmer gently uncovered for about 1 hour or until the Rhubarb Apple Date Chutney is thick. Stir occasionally especially towards the end of the cooking process.
Have clean hot glass jars ready and pour the thick Rhubarb Apple Date Chutney mixture into the hot jars. Seal jars when cold with non-metallic lids.
Makes about 3 x 350ml jars.
