Moist Fruit Cake Recipe
This moist Fruit Cake is always popular because it has pineapple, mixed fruit and several spices to bring out plenty of flavour and is a very moist cake. Because all the preparation is done in one saucepan it makes for an easy cleanup! This is a must try recipe and a great start to new bakers!
Ingredients
1 cup sugar
1 lb mixed fruit
1 teaspoon mixed spice
1 teaspoon cinnamon
½ teaspoon nutmeg
1 cup plain flour
1 cup self-raising flour
1 teaspoon baking soda
15 oz tin crushed pineapple
4oz butter
2 eggs
Combine sugar, pineapple, mixed fruit, spices, soda, butter and place in a medium to large saucepan and bring to boil. Boil for 2 minutes. Remove from heat and allow to cool completely. Sift in flour and add well beaten eggs.
Preheat oven to 180ºc or 350 degrees for 1½ - 2 hours. Place skewer in the cake after 1¼ hours to check on progress. The skewer should be clean when removed.
Handy Hints: When wanting to cool the saucepan quickly, place the saucepan into the kitchen sink half filled with cold water!
