Ice-Cream Custard Recipe
What a delicious compliment to fresh fruit salad, steamed pudding, chocolate self saucing pudding this Ice-cream Custard makes. Many a child has said “I don’t like custard” but will happily eat my Ice-cream Pudding!
Ingredients:
1 pint (600mls) milk
2 ½ heaped tablespoons butter
2 ½ heaped tablespoons sugar
2 ½ heaped tablespoons flour
1 egg
1 teaspoon vanilla essence
Place ½ the milk into a saucepan and add the butter and heat until melted. In a bowl place the remaining milk, sugar, flour and egg and beat well. With a wooden spoon stir the mixture into the hot milk and bring to boil slowly. Keep stirring while it thickens so the mixture doesn’t stick to bottom of saucepan. Remove from heat, add vanilla essence and beat well with egg beater until smooth.
Serve hot or cold with fresh or tinned fruit.
Handy Hints: This is also an ideal nutritious meal for sick children, or elderly as it is easy to swallow and very tasty. It stores well if covered, for a couple of days in the fridge.
