Chocolate Raisin Cake Recipe
This Chocolate Raisin Cake Recipe has also been popular and well talked about when I have been catering morning teas. When cooked the cake has a caramel swirl pattern.This is another Must Try recipe!
Ingredients
4oz butter
1 cup sugar
1 egg
1 cup milk
1 tablespoon golden syrup
1 teaspoon baking soda
1 ½ cups flour
1 teaspoon baking powder
1 teaspoon vanilla essence
Handful of raisins (or sultanas)
Cream butter and sugar. Add beaten egg. Warm milk with golden syrup and stir in baking soda. Add to creamed mixture.
Sift in flour, baking powder, vanilla and mix well. Put ½ mixture into 8” square papered tin and sprinkle with raisins.
To remaining mixture add 1 ½ tablespoons cocoa powder and mix well. Then spread on top of raisins.
Preheat oven to 160ºc or 325 degrees and bake for 1- 1 ¼ hours. When cool ice with chocolate icing.
Handy Hints: This cake is delicious served with whipped cream on the side with coffee after dinner instead of a dessert.
