Caramel Biscuits
225 grams butter
1 egg 2 cups flour
1 cup coconut ½ teaspoon baking soda
1 ¾ cups sugar 1 tablespoon condensed milk (tinned sweetened)
2 cups cornflakes 2 teaspoons baking powder
1 teaspoon vanilla essence Cream butter, sugar and egg together until light and creamy. Add remaining ingredients and mix well. Roll in hand 1 dessert spoon balls and then place on floured oven tray. Press down ball with a fork. Bake in a preheated oven at 180ºc for 10 minutes. If fan forced 170ºc for 8-10 minutes. Should be lightly golden. When cooled the cookies are yummy and crunchy.
Makes 60 – 70 biscuits so a great recipe for school lunch boxes!
